Beef stir-fry with udon noodles

• 400g udon noodles
• 1 bunch broccolini, finely sliced
• 190g snow peas (mangetout), topped, tailed and cut in half
• 450g lean beef strips
• 250g bean shoots, washed and drained
• 100g canned corn spears, drained and cut in half lengthways
• 2 tbsp sweet chilli sauce
• 2 tbsp sweet soy sauce
• ½ fresh lime, juiced
• Lime wedge, to serve

1. Place the noodles in boiling water for 30 seconds to separate them, then drain and set aside.
2. In a medium-sized saucepan, bring water to the boil. Place the broccolini in the water and bring to the boil again, then simmer for 2 minutes. Add the snow peas for 30 seconds, then drain.
3. Heat a non-stick wok. Stir-fry the beef strips on high heat until the beef starts to brown. Remove from the pan and place in a bowl.
4. Add the broccolini, snow peas, bean shoots, corn spears and noodles to the wok and toss until heated through.
5. Add the sauces and lime juice and toss all ingredients together. Return the beef strips to the wok and stir-fry until hot. Divide into 6 serving bowls and serve with fresh lime wedges, if desired.
