Lamb kofta wraps with parsley recipe


Lamb Kofta Wrap Recipe

Serves: 2

250g lamb mince

1/4 bunch parsley, leaves picked and half finely chopped

¼ tsp coriander

¼ tsp cumin salt and pepper, to taste

2 small pita breads (or gluten free), warmed

2 iceberg lettuce leaves, roughly torn

½ red onion, finely sliced

¼ pomegranate seeds removed (freeze the rest)

1/4 cup tzatziki




1. Preheat a grill over medium heat. Combine lamb, finely chopped parsley, spices, ¼ tsp salt and pinch pepper.

2. Divide mixture into six and mould around six skewers.

3. Cook 3-4 minutes each side until golden.

4. Warm bread on grill and top with lettuce, kofta, onion, pomegranate seeds and extra parsley leaves. Season and serve drizzled with tzatziki.
