Post workout savoury pancake

When you think pancakes, you automatically think sweet, stacked and dripping with syrup, right? But what if we told you that we’ve got a post gym approved version, that not only packs a serious nutritional punch, but also proves you can have your (pan)cake, and eat it too!

I am absolutely obsessed with this breakfast! This recipe is super simple and is the perfect post-workout meal as it contains plenty of protein and fibre (from the flax meal). It can also be changed to suit your individual taste. I often mix it up and swap between adding paprika, harissa and parsley to give each batch of savoury pancakes a different flavour.


INGREDIENTS


3 Cage Free Eggs

Handful of Spinach or Kale (optional)

1 tbsp Flaxmeal

1 tbsp Nutritional Yeast (or cheese)

Spices/Herbs of your choice (I use Harissa, Paprika or Parsley)

Olive oil


METHOD


Whisk all ingredients in a bowl for 2-3 minutes

Add olive oil to a frying pan and place on stove top over low heat

Pour batter into frying pan and wait until pancake has formed.

Allow to cook on both sides (flipping after 3-4 minutes)

Serve with additional herbs or greens!
